Lemon tart with fresh berries
Ingredients
FOR 15 PERSONS
Sable Sable
- 375 gr flour
- 225 gr butter pommade (soft)
- 3 gr salt
- 140 gr icing sugar
- 45 gr almond powder
- 1 pinch vanilla powder
- 75 gr eggs
Lemon Cream
- 9 eggs
- 9 egg yolks
- 4 lemons juice
- 2 lemons zest
- 450 gr sugar
- 3 gelatine leaves
- 150 gr butter
- 600 gr Mascarpone cheese
Berries
- 500 gr strawberries
- 300 gr raspberries
- 250 gr blackberries
- 120 gr blueberries
- 100 gr red currant berries
- 300 gr water
- 300 sugar
- 3 gelatine leaves
- 1 slice of lemon zest
- 4-5 fresh leaves of Verbena

STEP BY STEP
For the Dough
- STEP 01Mix all the dry ingredients in the mixer. Add the soft butter, eggs and beat with the special dough tool. Leave in the fridge the dough about an hour.
- STEP 02Roll out in a sheet and cut round biscuit thick pieces of dough with a round cutter, to use as the base for the tarts. Pierce the dough with a fork and bake at 170 degrees for 8-10 minutes.
For the Lemon Cream
- STEP 03Beat the eggs with their egg yolks, the lemon juice, zest and sugar in a thermomix or bain marie until the temperature reach 82 dgrees Celcius.
- STEP 04Add the gelatine leaves after soaking for a few minutes in cold water until soft and whisk.
- STEP 05Blend in the butter, and after it cools, the Mascarpone cheese.
- STEP 06Fill in the cake rings (same size as the biscuits) and put them in the refrigerator until the mixture sets.
For Berries
- STEP 07Boil sugar with water, Verbena leaves and lemon zest for 5 minutes. Add gelatine leaves and cool.
- STEP 08Soak berries in the syrup for a few seconds and put them into a strainer.
Presentation
- STEP 09Place the lemon cream over the baked sable dough and decorate as you like with the fresh berries. You can serve the tart with fresh fruits syrup.
